- In a bowl, combine crushed graham crackers and melted butter; then press the mixture into the bottom of a lined 8x8 inch baking dish.
- In another bowl, mix the softened cream cheese and powdered sugar until smooth.
- Add the strawberry puree and then fold in the whipped topping until well combined.
- Pour the strawberry mixture over the graham cracker crust and spread evenly.
- If using, sprinkle the strawberry crunch topping over the top.
- Refrigerate for at least 4 hours or until set.
- Cut into bars and serve chilled.
Notes
These bars can be stored in an airtight container in the fridge for about 5-7 days. They can also be frozen for up to a month—just thaw in the fridge before serving. For variations, consider adding crushed nuts or coconut flakes, or for tartness, a splash of lemon juice in the strawberry puree.
