  • 1 cup almond milk or any milk of choice
  • 1/4 cup chia seeds Nutrient-packed seeds
  • 2 tablespoons honey or maple syrup optional, to taste
  • 1 cup strawberries hulled and chopped
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. In a mixing bowl, whisk together almond milk, chia seeds, honey or maple syrup, vanilla extract, and a pinch of salt.
  2. Stir in the chopped strawberries until they’re evenly mixed.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight until it thickens to pudding consistency.
  4. Serve chilled, topped with extra strawberries if desired.

Notes

For serving, use fancy glasses to showcase the pudding and consider topping with a drizzle of honey, a sprinkle of nuts or mint leaves. This pudding can last up to 5 days in the fridge and can also be frozen for a refreshing summer snack. Customize sweetness and consider using frozen strawberries if fresh ones are scarce.
