Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar
  • 0.5 cups unsalted butter, melted
Filling
  • 2 packages cream cheese, softened 8 oz each
  • 1 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh strawberries, hulled and sliced
  • 0.25 cups strawberry jam

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking pan.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan.
Filling
  1. In a large bowl, beat cream cheese until smooth. Gradually add 1 cup of sugar and vanilla, mixing until well combined.
  2. Add eggs one at a time, beating well after each addition. Pour the cream cheese mixture over the crust.
  3. In a small bowl, mix sliced strawberries with strawberry jam. Spoon this over the cream cheese layer.
Baking
  1. Bake for 30-35 minutes, or until the edges are set and the center slightly jiggles.
  2. Let cool, then refrigerate for at least 4 hours before cutting into bars. Serve chilled.

Notes

Chill well before slicing to prevent crumbling. Serve with a drizzle of strawberry jam and powdered sugar for presentation.
