  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 4 large tortillas
  • 1 tablespoon olive oil
  • to taste Salt and pepper
Optional Garnish
  • Diced tomatoes, olives, or herbs For garnish

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped spinach and sauté until wilted.
  3. Remove from heat and mix in crumbled feta cheese.
  4. Place a tortilla in the skillet, sprinkle with the spinach-feta mixture, and top with another tortilla.
  5. Cook for 2-3 minutes on each side or until the tortillas are golden and crispy.
  6. Cut into wedges and serve warm. Garnish with optional toppings if desired.

Notes

These quesadillas will keep well for 3-4 days in the fridge if stored in an airtight container. You can even freeze them for up to a month. Pro tip: Keep an eye on the heat. You want them crispy, not burnt!
