  • 1 cup spinach, cooked and chopped
  • 1/2 cup feta cheese, crumbled
  • 1 package puff pastry sheets, thawed
  • 1 each egg (for egg wash)
  • Salt and pepper to taste
  • Olive oil (optional)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface.
  3. In a bowl, mix the chopped spinach, feta cheese, salt, and pepper.
  4. Spread the spinach and feta mixture evenly over the puff pastry.
  5. Roll the pastry tightly from one end to the other.
  6. Cut the rolled pastry into slices about 1 inch thick.
  7. Place the pinwheels on a baking tray lined with parchment paper.
  8. Brush the tops with beaten egg for a golden finish.
Baking
  1. Bake for 15-20 minutes, or until golden brown.
  2. Serve warm.

Notes

For best results, refrigerate the pinwheels for 30 minutes before baking to help maintain their shape. These can also be served with a dipping sauce like tzatziki or garlic aioli.
