Preparation
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface.
- In a bowl, mix the chopped spinach, feta cheese, salt, and pepper.
- Spread the spinach and feta mixture evenly over the puff pastry.
- Roll the pastry tightly from one end to the other.
- Cut the rolled pastry into slices about 1 inch thick.
- Place the pinwheels on a baking tray lined with parchment paper.
- Brush the tops with beaten egg for a golden finish.
Baking
- Bake for 15-20 minutes, or until golden brown.
- Serve warm.
Notes
For best results, refrigerate the pinwheels for 30 minutes before baking to help maintain their shape. These can also be served with a dipping sauce like tzatziki or garlic aioli.
