  • 1/4 cup Olive Oil For cooking.
  • 1 tsp Smoked Paprika
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 tsp Cayenne Adjust according to heat preference.
  • Tortillas To serve the tacos.
  • Shredded Lettuce For topping.
  • Chopped Tomatoes For topping.
  • Shredded Vegan Cheese For topping.
  • Salsa or Sauce of Choice For topping.

Preparation
  1. Cut potatoes into small bite-sized pieces. Place them in a bowl and cover with water. Let sit for 30 minutes, then strain, rinse, and gently pat dry.
Cooking
  1. In a large pan over medium heat, add the olive oil, potatoes, and spices. Mix well and cook, stirring often, until golden brown on most sides.
Serving
  1. Serve the cooked potatoes on tortillas and add your choice of toppings.

Notes

Store cooked potatoes in an airtight container in the refrigerator for up to three days. Keep tortillas and toppings separate for freshness. Reheat potatoes in a pan before assembling tacos. Cut potatoes evenly for consistent cooking.
