  • 1 can Chickpeas (canned chickpeas are a convenient option)
  • 1 medium Avocado (ripe for best flavor)
  • 1/2 medium Red Onion (substitute green onion for milder taste)
  • 1 medium Bell Pepper (any color for variety)
  • 1 small Jalapeño (adjust for heat preference)
  • 2 tablespoons Lime Juice (fresh for best flavor)
  • 1 teaspoon Chili Powder (or taco seasoning)
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika (or regular paprika)
  • 1/2 teaspoon Garlic Powder (or fresh minced garlic)

  • 4 large Tortillas (whole wheat or gluten-free varieties)

Method
 

Preparation
  1. Drain and rinse the chickpeas thoroughly.
  2. In a bowl, mash the avocado, and mix in the lime juice, salt, and pepper.
  3. In a separate bowl, combine the chickpeas, red onion, bell pepper, jalapeño, and spices — mix it up!
  4. Spread the avocado mixture evenly onto each tortilla.
  5. Top with the spicy chickpea mix.
  6. Roll up the tortillas tightly, slice in half, and voilà! You’ve got wraps ready to devour.

Notes

Store in the fridge for about 2-3 days. Wrap tightly in foil or parchment paper; avoid freezing the avocado. Reheat in a skillet or enjoy cold.
