- Drain and rinse the chickpeas thoroughly.
- In a bowl, mash the avocado, and mix in the lime juice, salt, and pepper.
- In a separate bowl, combine the chickpeas, red onion, bell pepper, jalapeño, and spices — mix it up!
- Spread the avocado mixture evenly onto each tortilla.
- Top with the spicy chickpea mix.
- Roll up the tortillas tightly, slice in half, and voilà! You’ve got wraps ready to devour.
Notes
Store in the fridge for about 2-3 days. Wrap tightly in foil or parchment paper; avoid freezing the avocado. Reheat in a skillet or enjoy cold.
