Ingredients

  • 4 cups lettuce mix
  • 1 cup tomato, cubed
  • 1 avocado, cubed
  • 15 oz black beans, drained
  • 1/2 cup corn, drained
For the Dressing
  • 1/2 batch Catalina Dressing
  • 1 tablespoon cumin
  • 1/2 teaspoon chili powder

Method
 

Preparation
  1. In a small bowl, combine the prepared Catalina dressing with cumin and chili powder, then set aside.
  2. In a large bowl, mix the lettuce with black beans, tomatoes, corn, and avocado. Season with an extra pinch of salt and pepper to taste.
Serving
  1. Pour the dressing over the salad and enjoy. Serve on plates or in bowls.

Notes

For added crunch, consider topping the salad with tortilla strips or nuts. You can use different beans like kidney beans or chickpeas and add other vegetables like bell peppers or cilantro.
