  • 1 pound ground beef
  • 4 medium-sized potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped (any color)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and black pepper
  • 1 tablespoon olive oil
  • 1 cup shredded cheese (cheddar or your choice)
  • Fresh cilantro for garnish (optional)

Method
 

Cooking Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Stir in the ground beef, cooking until browned. Drain any excess fat.
  4. Add the diced potatoes, bell peppers, chili powder, cumin, paprika, salt, and black pepper. Stir well to combine.
  5. Pour in the diced tomatoes and black beans. Cover and let simmer for about 20 minutes, or until the potatoes are fork-tender.
  6. Sprinkle the shredded cheese on top and cover to melt.
  7. Serve hot, garnished with fresh cilantro if desired.

Notes

This dish keeps well in the fridge for about 3-4 days and can be frozen for up to 3 months. Reheat thoroughly before serving.
