  • 3 pieces ripe bananas, mashed Use extra ripe bananas for better sweetness.
  • 1 cup sour cream Can substitute with Greek yogurt.
  • 1/2 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup sugar Can be replaced with brown sugar for a deeper flavor.
  • 2 large eggs Can be substituted with flax eggs for a vegan version.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the mashed bananas, sour cream, eggs, and vanilla extract to the mixture and mix until combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, consider adding chocolate chips or nuts. This banana bread pairs well with warm tea or coffee.
