  • 2 tablespoons red curry paste Don't skimp on the curry paste for maximum flavor!
  • 1 tablespoon fish sauce Substitute with tamari for a vegetarian or vegan option.
  • 1 tablespoon sugar
  • 1 cup vegetable broth Or use chicken broth for added flavor.
  • 1 tablespoon lime juice Add at the end for a zesty kick.
For the Dumplings
  • 1 package soup dumplings Frozen soup dumplings can also be used.
Garnish
  • to taste fresh cilantro For a pop of flavor and visual appeal.

Preparation
  1. In a pot, combine coconut milk, red curry paste, fish sauce, sugar, and vegetable broth. Bring to a simmer over medium heat.
  2. Add the soup dumplings to the pot and cook according to the package instructions.
  3. Once cooked, remove from heat and stir in lime juice.
Serving
  1. Serve the soup dumplings in the curry sauce, garnished with fresh cilantro.

Notes

Leftovers can be stored in the fridge for 3-4 days. For longer storage, freeze for up to a month. Reheat gently on the stove to maintain texture.
