Ingredients

Dough Ingredients
  • 2 cups all-purpose flour
  • 1 cup water
Filling Ingredients
  • 1 pound ground pork
  • 1/4 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • 1 tablespoon sesame oil
  • Cornstarch for dusting

Method

Preparation
  1. Combine the flour and water in a bowl. Knead until smooth. Cover and let it rest for 30 minutes.
  2. In a separate bowl, mix the ground pork, chicken broth, soy sauce, ginger, garlic, sugar, and a sprinkle of salt and pepper. Refrigerate for another 30 minutes.
  3. Roll out your dough and cut it into small circles.
Assembly
  1. Place a spoonful of the filling in the center of each circle.
  2. Gather the edges and pinch to seal, forming a pleated pouch.
Cooking
  1. Prepare a steamer and place the dumplings on parchment paper.
  2. Steam for about 15 minutes. Serve hot with your favorite dipping sauce.

Notes

Make the dough the day before and let it rest overnight for extra flavor. Try adding oyster sauce to the filling for a pop of umami. Ensure your dumpling pleats are tightly sealed to keep all that goodness inside.
