  • 2 pounds boneless, skinless chicken thighs or breasts Thighs recommended for juiciness.
  • 1 cup honey
  • ¼ cup soy sauce (low sodium preferred) Can substitute with coconut aminos for gluten-free.
  • ⅓ cup ketchup
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon ground ginger
  • ½ teaspoon black pepper
  • 1 tablespoon cornstarch (optional, for thickening)

  • Green onions, for garnish (optional)
  • Sesame seeds, for garnish (optional)

Method
 

Preparation
  1. Place the chicken thighs or breasts in the bottom of the slow cooker.
  2. In a bowl, combine honey, soy sauce, ketchup, minced garlic, rice vinegar, ground ginger, and black pepper.
  3. Pour the sauce mixture over the chicken in the slow cooker, ensuring all pieces are well coated.
Cooking
  1. Cover and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is tender.
  2. Optional: If you prefer a thicker sauce, remove the chicken after cooking and whisk cornstarch with a little water in a separate bowl. Add this to the slow cooker and cook on high for an additional 15 minutes.
  3. Once cooked, shred the chicken using two forks, allowing it to absorb more of the flavorful sauce.
Serving
  1. Optionally, garnish with sliced green onions and sesame seeds before serving.
  2. Transfer the chicken and sauce to a serving dish.

Notes

Store leftovers in the fridge for about 3-4 days. For longer storage, freeze in an airtight container for up to 3 months. Reheat with a splash of water to maintain moisture.
