  • 1 lb Ground beef or ground turkey Use your choice of protein
  • 1 cup Sloppy Joe sauce Store-bought or homemade
  • 1 medium Onion (chopped) Provides flavor
  • 2 cloves Garlic (minced) Enhances taste
  • to taste Salt and pepper Adjust according to personal preference

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and pierce them with a fork.
  3. Bake for 45-60 minutes until soft.
Cooking the Filling
  1. In a skillet, sauté chopped onions and garlic until translucent.
  2. Add the ground beef or turkey and cook until browned.
  3. Stir in the Sloppy Joe sauce and let it simmer for a few minutes.
Assembly
  1. Once the sweet potatoes are baked, cut them open and fill with the Sloppy Joe mixture.
  2. Add any optional toppings if desired and serve warm.

Notes

Timing is everything: Bake the sweet potatoes first. Experiment with proteins and consider adding a squeeze of lime for brightness. Leftovers can be stored in the fridge for 3-4 days.
