  • 1/2 cup onion, diced
  • 1/2 cup green bell pepper, diced
  • 1 cup sloppy joe sauce
  • 1 cup shredded cheddar cheese
  • 1 can refrigerated cheddar bay biscuits
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef, onion, and green bell pepper over medium heat until the meat is browned and the vegetables are tender. Drain excess fat.
  3. Stir in the sloppy joe sauce and let simmer for a few minutes.
  4. In a separate bowl, combine the milk, garlic powder, and a pinch of salt and pepper.
  5. Pour the sloppy joe mixture into a greased casserole dish.
  6. Cut the cheddar bay biscuits into quarters and scatter them over the sloppy joe mixture.
  7. Pour the milk mixture over the biscuits, and top with shredded cheddar cheese.
  8. Bake for 25-30 minutes, or until the biscuits are golden brown and the cheese is bubbly.
  9. Let cool for a few minutes before serving.

Notes

This casserole is easy to prepare and can be customized with additional veggies or ground turkey for a lighter option. Leftovers keep well in the fridge for 3-4 days or can be frozen for up to 3 months.
