Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel (if desired) and cut the potatoes into thick wedges. Soak them in cold water for 30 minutes to remove excess starch.
  3. In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  4. Drain the potatoes and pat them dry thoroughly. Toss them in the marinade until fully coated.
Cooking
  1. Spread the potato wedges in a single layer on a baking sheet.
  2. Roast for about 40–45 minutes, flipping halfway through for even crispiness.
  3. For extra crunch, broil for an additional 2–3 minutes at the end.
Serving
  1. Garnish with chopped fresh parsley if desired and serve hot.

Notes

Got leftovers? Store them in an airtight container in the fridge for up to 3–4 days. Reheat in the oven for optimal crispiness. Don't skip the soaking step for the perfect texture. Try adding paprika or cumin for a flavor twist or making it vegan by using a plant-based oil and omitting garlic.
