  • 1 pound shrimp, peeled and deveined Fresh or frozen shrimp can be used, make sure to thaw if using frozen.
  • 2 pieces ripe avocados, diced Choose ripe avocados for creamy texture.
  • 1 cup cherry tomatoes, halved Any variety of cherry tomatoes will work.
  • 1 cup cucumber, diced Peel if desired for a milder taste.
  • 1/4 cup red onion, thinly sliced Adjust quantity for milder flavor.
  • 1/4 cup fresh cilantro, chopped Substitute with parsley if cilantro is not preferred.
Dressing Ingredients
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice Freshly squeezed for best flavor.

  • to taste Pepper

Method
 

Preparation
  1. In a large bowl, combine shrimp, avocado, cherry tomatoes, cucumber, red onion, and cilantro.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well mixed.
  3. Pour the dressing over the salad mixture and toss gently to combine.
  4. Serve immediately, or chill in the refrigerator for 30 minutes before serving for maximum flavor.

Notes

For optimal freshness, store the dressing separately if there are leftovers and mix just before serving. Avocados may brown over time.
