  • 2 pounds red potatoes Cut into 1-inch bite-sized chunks
  • 3 tablespoons olive oil For tossing the potatoes
  • 1 cup grated Parmesan cheese Freshly grated, reserve some for topping
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • teaspoons salt To taste
  • teaspoons black pepper To taste

Method
 

Preparation
  1. Wash and scrub the red potatoes, then chop them into 1-inch bite-sized chunks.
  2. In a mixing bowl, toss the cut potatoes with olive oil, salt, black pepper, garlic powder, and Italian herbs.
  3. Coat the potatoes thoroughly, then add the grated Parmesan cheese, reserving a little for later.
  4. Spread the potatoes in a single layer on a large baking sheet.
Cooking
  1. Roast in a preheated oven at 400°F (200°C) for 30-35 minutes, flipping halfway through to ensure even crisping.
  2. In the last 5 minutes of roasting, sprinkle the reserved Parmesan cheese over the top.

Notes

These potatoes are best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for crispiness.
