Ingredients
  

Main Ingredients
  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or milk of choice)
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh or frozen raspberries (plus more for topping)
Toppings
  • sliced almonds or chopped nuts
  • shredded coconut
  • additional raspberries or mixed berries
  • extra drizzle of maple syrup

Method
 

Preparation
  1. In a bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well until fully combined.
  2. In a separate bowl, mash the raspberries to bring out their juices.
  3. Pour the raspberry mash into the chia mixture and stir. Cover the bowl or divide into serving cups, and refrigerate for at least 4 hours or overnight.
Serving
  1. Once set, top with sliced almonds, shredded coconut, and more raspberries. Drizzle with extra maple syrup.

Notes

For a silkier texture, blend everything together before serving. You can swap raspberries for other berries like strawberries or blueberries for variety.
