Preparation
- In a bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well until fully combined.
- In a separate bowl, mash the raspberries to bring out their juices.
- Pour the raspberry mash into the chia mixture and stir. Cover the bowl or divide into serving cups, and refrigerate for at least 4 hours or overnight.
Serving
- Once set, top with sliced almonds, shredded coconut, and more raspberries. Drizzle with extra maple syrup.
Notes
For a silkier texture, blend everything together before serving. You can swap raspberries for other berries like strawberries or blueberries for variety.
