Ingredients
  

Broth Ingredients
  • 1 pound pork bones For a rich and flavorful broth.
  • 1 pound pork skin Adds richness to the broth.
  • 1 pound pork Tender pork for filling.
  • 1 large onion For flavor in the broth.
  • 1 head garlic Adds aromatic flavor.
  • 3 inches ginger Sliced for the broth.
Dumpling Dough Ingredients
  • 3.5 cups flour, sifted For making the dumpling wrappers.
  • 3/4 cup boiling water Used to combine with flour for the dough.
  • 1 tablespoon vegetable oil Incorporated into the dough.
Filling Ingredients
  • 2 packets cooked ramen noodles For filling the dumplings.
  • 8 oz prepared chashu pork, cut into small pieces For added flavor and texture.
  • 2 hard-boiled eggs, cut into 8ths Adds richness to the filling.
  • Scallions, sliced For garnish and flavor.

Method
 

Prepare the Broth
  1. Toss the pork bones, skin, onion, garlic, ginger, and boiling water into a slow cooker. Season with salt and pepper. Let it work its magic on low heat for 24 hours.
  2. Use a cheesecloth to strain the broth and cool it overnight in the fridge.
Make the Dough
  1. In a bowl, mix the flour with boiling water; stir until combined. Add the vegetable oil and blend until the dough forms. Knead for about 10 minutes until smooth.
Shape the Dumplings
  1. Roll out the dough to medium thinness and cut into 6-inch rounds.
  2. Place about 2 tablespoons of the gelled broth, a twirl of ramen noodles, a slice of egg, and some pork pieces into each round. Top with scallions and an additional tablespoon of broth. Seal by folding the edge of the dough over itself several times.
Cook the Dumplings
  1. Arrange dumplings on parchment paper brushed with oil and steam for about 10 minutes. Serve them in bowls with spoons and chopsticks, and drizzle with soy sauce for that extra kick.

Notes

These dumplings will keep in the fridge for about 3 days in an airtight container. You can freeze them for a few months! When ready, steam from frozen, adding a couple of extra minutes to the cooking time. Don't skip straining the broth; it's essential for the clear, delicious flavor.
