Ingredients
  

Main ingredients
  • 1 block firm tofu Press to remove excess moisture.
  • 1 tablespoon nutritional yeast Adds a cheesy flavor.
  • 1/4 teaspoon turmeric For color and flavor.
  • to taste Salt and pepper Season your omelette.
  • 1/4 cup diced bell pepper Any color works.
  • 1/4 cup diced onion Adds flavor.
  • 1/4 cup diced tomatoes For freshness.
  • 1 tablespoon olive oil For sautéing.
  • to taste Fresh herbs Optional garnish.

Method
 

Preparation
  1. Press the tofu to remove excess moisture and crumble it into a bowl.
  2. Add nutritional yeast, turmeric, salt, and pepper to the crumbled tofu and mix well.
Cooking
  1. Heat olive oil in a pan over medium heat.
  2. Sauté the onion and bell pepper until softened, about 3-5 minutes.
  3. Add the tofu mixture to the pan and cook for about 5-7 minutes, stirring occasionally, until heated through.
  4. Serve with fresh herbs if desired.

Notes

Leftovers keep well in the fridge for about 3-5 days. Can freeze for up to a month. Reheat in a skillet or microwave without making it rubbery.
