  • 800 g starchy potatoes, peeled and cut into chunks Use starchy potatoes for a better texture.
  • 180 g Greek feta cheese, crumbled
  • 1 small onion, finely grated
  • 2 cloves garlic, minced Toasting the garlic adds depth of flavor.
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh mint, finely chopped (optional)
  • 1 large egg For a vegan option, swap for a flax egg.
  • 80 g all-purpose flour
  • 40 g breadcrumbs
  • 1 teaspoon dried Greek oregano
  • ½ teaspoon ground cumin (optional)
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper

Method
 

Preparation
  1. Boil the starchy potatoes in salted water until tender. Drain and let cool slightly before mashing.
  2. In a large bowl, combine the mashed potatoes, feta cheese, grated onion, minced garlic, parsley, dill, mint (if using), and egg. Mix well until everything is combined.
  3. Add the flour, breadcrumbs, oregano, cumin (if using), salt, and pepper. Stir until a dough-like consistency forms.
  4. Shape the mixture into small patties.
Cooking
  1. Heat oil in a frying pan over medium-high heat.
  2. Fry the patties until golden brown and crispy on both sides, about 3-4 minutes per side.
  3. Remove from the pan and drain on paper towels. Serve warm as a mezze or appetizer.

Notes

These fritters keep well in the fridge for up to 3 days. For longer storage, freeze them for up to a month. Reheat in a skillet over medium heat until warmed through and crispy again.
