Ingredients
  

Fritter Mixture
  • 10.5 oz yukon gold potatoes or other starchy potatoes (boiled, 4 small or 1 large) Ensure potatoes are well-drained.
  • 1 can sweet corn kernels (15oz/425g can, 8.8oz/250g drained weight) Frozen corn can be used after thawing.
  • 1/2 medium carrot (grated)
  • 1 bunch cilantro or chives (chopped)
  • 1 medium onion (diced)
  • 1/2 cup vegan cheese shreds (e.g., Daiya mozzarella shreds)
  • 1/2 cup all-purpose flour (or other flour of choice) Gluten-free flour can be used.
  • 1 whole chili or jalapeño (sliced, optional for heat)
  • 2 cloves garlic (minced)
  • 1/4-1/2 tsp salt (adjust to taste)
  • Ground pepper Use according to taste.
  • Neutral oil for cooking
Dipping Sauce
  • equal parts tomato/banana ketchup and vegan mayo Adjust the amount as per preference.
  • Other dipping sauce of choice

Method
 

Preparation
  1. In a large mixing bowl, combine the boiled potatoes, sweet corn, grated carrot, chopped cilantro or chives, diced onion, vegan cheese, flour, sliced chili or jalapeño, minced garlic, salt, and ground pepper. Mix well until all ingredients are combined.
Making the Dipping Sauce
  1. For a simple dipping sauce, mix equal parts tomato or banana ketchup with vegan mayo in a bowl. Adjust the amount based on your preference.
Cooking the Fritters
  1. Heat a skillet over medium heat and add a little neutral oil. Once hot, take a spoonful of the fritter mixture and flatten it into the hot skillet.
  2. Cook for about 3-4 minutes on each side, or until golden brown. Repeat with the remaining mixture.
Baking Option
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and place the fritters on it. Bake for about 20 minutes, flipping halfway through.
Air-Frying Option
  1. Preheat your air fryer to 375°F (190°C). Place the fritters in the basket in a single layer, ensuring they don’t touch. Cook for about 10-12 minutes, flipping halfway through until they are golden and crispy.
Freezing the Fritters
  1. Prepare the fritters as directed but do not cook them. Lay them on a baking sheet and freeze until firm, then transfer to a freezer bag. When ready to eat, simply cook from frozen.

Notes

Make sure the potatoes are well-drained after boiling to avoid a watery mixture. Adjust the quantity of salt and spices according to your taste. Feel free to add other veggies like bell peppers or spinach to the fritter mix for added nutrition.
