Main Ingredients
  • 1 cup butter, softened Make sure it's soft enough to blend easily.
  • 1 cup sugar
  • 2 cups all-purpose flour Can substitute with whole wheat or coconut flour.
  • 1 cup crushed pineapple, drained Drain well to avoid sogginess.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (optional) Pecans or walnuts can be used.
  • Powdered sugar for dusting (optional)

Method
 

Baking
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the flour, baking powder, and salt to the mixture, and mix until just combined.
  4. Fold in the crushed pineapple, shredded coconut, and nuts if using.
  5. Spread the batter evenly in the prepared baking dish.
  6. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick comes out clean.
  7. Allow to cool in the pan before cutting into bars. Dust with powdered sugar before serving if desired.

Notes

These bars can be served plain, with whipped cream, or paired with ice cream. Store leftovers in the refrigerator for 3-4 days or freeze for up to a month.
