Preparation
  1. In a bowl, whisk the eggs with salt and pepper.
  2. Heat a skillet over medium heat and add butter or oil.
  3. Sauté the onions and peppers until soft.
  4. Add the sliced beef to the skillet and cook for an additional minute.
  5. Pour the whisked eggs into the skillet, ensuring they cover the beef and veggies.
  6. Let the omelette cook undisturbed until the edges firm up.
  7. Sprinkle cheese on one half of the omelette and fold the other half over the cheese.
  8. Cook for a minute more until the cheese melts, then slide the omelette onto a plate and serve.

Notes

Store in the fridge for up to 3 days or freeze individual portions. Reheat in the microwave for about one minute.
