Base Ingredients
  • 3 cups old-fashioned rolled oats Use verified gluten-free, if needed
  • 3/4 cup natural peanut butter *
  • 1/3 cup honey or maple syrup Honey helps hold the bars together better
  • 1/2 cup mini chocolate chips Optional
  • 2 whole eggs Use flax egg for vegan-friendly option
Optional Add-ins
  • 1 pinch salt Omit if peanut butter is salted
  • walnuts, pecans, almonds, chia seeds, sunflower seeds, pumpkin seeds, or dried fruit Use any combination based on preference.

Preparation
  1. Preheat your oven to 350℉.
  2. In a large bowl, combine all ingredients and mix well. Heat peanut butter for 10-15 seconds if solid to make mixing easier.
  3. Line a 9x9 inch baking dish with parchment paper for easier removal.
  4. Transfer mixture to the lined dish and press it firmly into an even layer.
  5. If using chocolate chips, sprinkle them on top and press them down.
Baking
  1. Bake for 15-17 minutes until the center is baked through and edges start to brown. Check at 14 minutes.
  2. Remove the pan from the oven and place it on a cooling rack.
Serving
  1. Let the bars cool completely before cutting them into 16 squares.

Notes

Mix ingredients well and press down firmly to hold together after baking. Try different nut butters or sweeteners for unique flavors.
