Ingredients
  

For the crust
  • 1 cup Graham cracker crust Crushed graham crackers
  • 1/4 cup Butter Melted
For the filling
  • 8 oz Cream cheese At room temperature
  • 1/2 cup Sour cream Can substitute with Greek yogurt
  • 3/4 cup Sugar Adjust based on peach sweetness
  • 1 tsp Vanilla extract For flavor
  • 2 large Eggs Add one at a time
  • 2 cups Fresh peaches Chopped, ripe but firm

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine crushed graham crackers and melted butter to form the crust, then press it into the bottom of a baking dish.
  3. In another bowl, beat cream cheese and sour cream with sugar and vanilla extract until smooth.
  4. Add eggs one at a time, mixing well after each.
  5. Fold in chopped fresh peaches gently.
  6. Pour the mixture over the crust and spread evenly.
Baking
  1. Bake for 25-30 minutes or until set.
  2. Allow to cool in the refrigerator for at least 2 hours before cutting into bars.
  3. Serve chilled and enjoy!

Notes

Serve with a dollop of whipped cream or sprinkle toasted almonds for added flavor. Wrap leftovers tightly and store in the fridge for up to 5 days, or freeze for up to 3 months.
