Ingredients
  

Filling
  • 2 cups fresh peaches, diced Use ripe peaches for the best flavor.
  • 1 cup sugar Adjust sweetness based on peach ripeness.
  • 2 tablespoons cornstarch Helps to thicken the filling.
  • 1 teaspoon cinnamon Adds warmth and flavor.
  • 1 teaspoon vanilla extract
Crust Topping
  • 1/2 cup butter, melted
  • 1 cup all-purpose flour For a gluten-free option, substitute with a gluten-free flour blend.
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar Adds a deeper sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the diced peaches, sugar, cornstarch, cinnamon, and vanilla extract. Set aside.
  3. In another bowl, mix the melted butter, flour, salt, and brown sugar until crumbly.
  4. Press half of the mixture into the bottom of a greased baking pan.
  5. Spread the peach mixture over the crust evenly.
  6. Sprinkle the remaining crumb mixture on top of the peaches.
Baking
  1. Bake for 30-35 minutes or until golden brown.
  2. Allow to cool before cutting into bars and serving.

Notes

Serve warm, dusted with powdered sugar or with a scoop of vanilla ice cream. Store in an airtight container in the fridge for up to a week or freeze for up to three months.
