For the Cobbler
  • 6 cups fresh peaches, sliced
  • 1 cup sugar Add more if peaches aren't very sweet
  • 1 cup all-purpose flour Use gluten-free blend for a gluten-free option
  • 1 cup milk Almond milk can be used for a vegan option
  • 1/2 cup butter, melted Don't skimp on the butter for a crispy top
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix sliced peaches with sugar and set aside.
  3. In another bowl, combine flour, baking powder, salt, milk, and vanilla extract until smooth.
  4. Pour melted butter into a baking dish, then pour the batter over the butter without stirring.
  5. Spoon the peach mixture on top of the batter.
  6. Bake for 30-40 minutes or until golden brown.
  7. Let cool before serving.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream. Optional: sprinkle with cinnamon before serving. Store in the fridge for 3-4 days or freeze for up to 3 months. Bake a day in advance for best flavor.
