Main Ingredients
  • 4 medium russet potatoes Leave the skin on for extra crispiness.
  • 2 tablespoons extra virgin olive oil Can substitute with avocado or coconut oil.
  • ¾ teaspoon onion powder
  • ¾ teaspoon smoked paprika
  • 1½ teaspoons garlic powder
  • Salt and pepper To taste.
  • Chopped parsley Optional, for garnishing.
  • Grated Parmesan cheese Optional, for garnishing.

Method
 

Preparation
  1. Cut potatoes into wedges by slicing each potato lengthwise in half, then cut the halves into four even-sized wedges.
  2. Leave the skin on to help achieve a perfect crisp.
  3. In a large bowl, season the wedges with garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Drizzle in the extra virgin olive oil and toss until the wedges are well coated.
Baking
  1. Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet without overcrowding.
  2. Bake in the oven at 425°F (about 220°C) for 40 to 45 minutes, flipping and rotating halfway through.
  3. Check for readiness when the wedges are crispy and golden brown.
Serving
  1. Sprinkle with chopped parsley and Parmesan cheese if desired, and serve with your favorite dipping sauce.

Notes

Store in an airtight container in the fridge for 3 to 5 days or freeze for up to two months. Reheat in the oven at 400°F for 10-15 minutes for optimal crispiness.
