  • 120 g applesauce
  • 100 g oats *can use quick oats if desired
  • 1 teaspoon honey (more to taste)
  • 1 tablespoon coconut oil *must be melted before mixing

  • dried fruits optional to add for more flavor

Method
 

Preparation
  1. Measure half of the oats and set them aside.
  2. In a blender, mix the remaining oats, applesauce, honey, and coconut oil until smooth.
  3. Add the blended mixture to the reserved oats and knead until well combined.
  4. Let the dough rest in the fridge for about 20 minutes.
  5. Meanwhile, line a baking sheet with parchment paper and preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  6. Shape the dough into 10-15 balls and place them on the baking sheet. Press them flat.
  7. Bake the cookies for about 12-13 minutes. Then, let them cool down.

Notes

These cookies are delicious on their own or with milk. Serve warm with yogurt or ice cream for a treat. Store in an airtight container at room temperature for up to a week or freeze for longer storage.
