Preparation
- Measure half of the oats and set them aside.
- In a blender, mix the remaining oats, applesauce, honey, and coconut oil until smooth.
- Add the blended mixture to the reserved oats and knead until well combined.
- Let the dough rest in the fridge for about 20 minutes.
- Meanwhile, line a baking sheet with parchment paper and preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Shape the dough into 10-15 balls and place them on the baking sheet. Press them flat.
- Bake the cookies for about 12-13 minutes. Then, let them cool down.
Notes
These cookies are delicious on their own or with milk. Serve warm with yogurt or ice cream for a treat. Store in an airtight container at room temperature for up to a week or freeze for longer storage.
