Ingredients
  

For the crust
  • 2.5 cups almond flour
  • 1 cup nut butter (almond or peanut butter)
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 2 tsps vanilla extract
  • 1/2 tsp salt
For the filling
  • 1.5 cups chocolate chips
  • 1 cup canned coconut milk (full-fat) Not light
  • 1 tsp vanilla extract

Method
 

Preparation
  1. In a large bowl, add almond flour, nut butter, cocoa powder, maple syrup, vanilla extract, and salt. Mix together until evenly incorporated.
  2. Transfer the dough to a tart pan (or a pie pan). Firmly press the dough across the bottom and sides of the pan, leaving a 'well' in the center for the filling. Set aside.
Filling
  1. In a small bowl, add coconut milk. Microwave for 45 seconds.
  2. Add chocolate chips and vanilla extract to the bowl. Let sit for 1 minute, then whisk together until smooth.
  3. Pour into the center of the tart and spread evenly across the pan.
Chilling
  1. Chill the tart in the refrigerator for 2 hours (or until the filling sets).
  2. After chilling, add your favorite toppings, slice, and enjoy!

Notes

For best results, do not rush the chilling time. Keep stored in the refrigerator if saving for later. This tart is great for meal prep — make it a day or two in advance for maximum flavor.
