No Bake Turtle Brownies

Ingredients
  

Brownie Layer
  • 1.5 cups raw walnuts
  • 1.5 cups raw almonds
  • 2.5 cups medjool dates, packed pitted
  • 0.5 cups cocoa powder
  • 0.5 tsp vanilla extract
  • 0.25 tsp salt
Caramel Layer
  • 2 cups medjool dates, packed pitted
  • 2-4 tbsp water as needed
  • 1 tsp vanilla extract
  • 0.125 tsp salt
Toppings
  • 0.5 cups crushed pecans
  • 0.5 cups mini chocolate chips

Method
 

Create the brownie layer
  1. In a food processor, add walnuts, almonds, pitted medjool dates, cocoa powder, vanilla extract, and salt.
  2. Process until a sticky brownie dough forms.
Press the dough
  1. Line a square baking dish with parchment paper.
  2. Use your clean hands to evenly press the brownie dough across the base of the dish.
Create the caramel layer
  1. In the food processor, blend the pitted medjool dates, water, vanilla extract, and salt until smooth.
Spread it all out
  1. Spread the caramel over the brownie layer, then sprinkle crushed pecans on top.
  2. Gently press them into the caramel.
  3. Add the mini chocolate chips and press them into the pecans.
Freeze
  1. Pop the turtle brownies in the freezer for 1 hour.
  2. After freezing, slice and serve.

Notes

These brownies can be stored in the fridge for about 5 days or in the freezer for up to 3 months. For best results, slice and freeze pieces individually.
