Ingredients
  

For the Mushroom Topping
  • 2 cups mushrooms (sliced, any variety) Fresh mushrooms for best results.
  • 2-3 tsp extra virgin olive oil Use good quality for better flavor.
  • 2-4 cloves garlic (roughly chopped) Adjust according to taste.
  • 1 Tbsp balsamic or apple cider vinegar Adds a tangy flavor to the mushrooms.
  • to taste salt and pepper Adjust to preference.
For the Toast
  • 2 slices bread (toasted) Choose your favorite type of bread.
  • 1 avocado Best if ripe and creamy.
  • 1 slice fresh lemon – for the juice Brightens the flavor.

Method
 

Cooking the Mushrooms
  1. Warm a skillet over high heat and add the olive oil.
  2. When the oil is hot, toss in the garlic and let that aroma fill your kitchen.
  3. About a minute later, pour in the mushrooms and give a gentle toss with a spatula.
  4. Cover the pan with a lid and let those mushrooms cook for 1-3 minutes until tender and lightly browned.
  5. Reduce the heat to low, remove the lid, and season with salt and pepper.
  6. Add in the vinegar, toss again, and then increase the heat to high to burn off any excess liquid.
Preparing the Toast
  1. Toast your bread to golden perfection.
  2. Mash the avocado right onto the toasted bread.
  3. Squeeze fresh lemon juice on top and layer your warm mushrooms over the avocado.
  4. Slice, serve, and enjoy!

Notes

Serve with red pepper flakes or microgreens for added flavor and presentation. Leftovers can be stored in the fridge for 2-3 days, but prepare fresh toast and avocado when ready to eat.
