Method
Cooking the Mushrooms
- Warm a skillet over high heat and add the olive oil.
- When the oil is hot, toss in the garlic and let that aroma fill your kitchen.
- About a minute later, pour in the mushrooms and give a gentle toss with a spatula.
- Cover the pan with a lid and let those mushrooms cook for 1-3 minutes until tender and lightly browned.
- Reduce the heat to low, remove the lid, and season with salt and pepper.
- Add in the vinegar, toss again, and then increase the heat to high to burn off any excess liquid.
Preparing the Toast
- Toast your bread to golden perfection.
- Mash the avocado right onto the toasted bread.
- Squeeze fresh lemon juice on top and layer your warm mushrooms over the avocado.
- Slice, serve, and enjoy!
Notes
Serve with red pepper flakes or microgreens for added flavor and presentation. Leftovers can be stored in the fridge for 2-3 days, but prepare fresh toast and avocado when ready to eat.
