  • 3 pieces ripe bananas, mashed Use overripe bananas for the best flavor.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • a pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup dark chocolate chips Semisweet or milk chocolate can also be used.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, mix the mashed bananas with the melted butter.
  3. Stir in the baking soda and salt.
  4. Add the sugar, beaten egg, and vanilla; mix well.
  5. Finally, stir in the flour and chocolate chips until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

For maximum flavor, use very ripe bananas. Add walnuts or pecans for a crunchy texture. Wrap leftovers tightly and store for up to 3-4 days at room temperature, or freeze for up to 3 months.
