Ingredients
  

Potato Wedges
  • 4 large large potatoes Any type of potato can be used.
  • 3 tablespoons olive oil For coating the wedges.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper To taste.
  • 1/4 cup chopped fresh herbs Can use parsley, basil, or mint.
  • 1 zest lemon For fresh flavor.
Dipping Sauce
  • 1 cup plain yogurt For serving.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Cut the potatoes into wedges and place them in a large bowl.
  3. Drizzle the olive oil over the potato wedges and sprinkle with dried oregano, thyme, garlic powder, paprika, salt, and pepper.
  4. Toss to coat evenly.
Cooking
  1. Spread the potato wedges in a single layer on a baking sheet.
  2. Roast in the oven for 30-35 minutes or until golden and crispy, flipping halfway through.
  3. Remove the potatoes from the oven and toss them with the freshly chopped herbs and lemon zest.
Serving
  1. Serve hot with plain yogurt on the side.

Notes

Leftovers keep well in the fridge for about 3-4 days in an airtight container. To freeze, store for up to 2 months and reheat in an oven at 375°F (190°C) for about 10-15 minutes.
