Ingredients
  

Main Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 can chickpeas, rinsed and drained
  • 2 cups fresh spinach
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • to taste Lemon juice for serving

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the onion, carrots, and celery for about 5 minutes until they soften.
  3. Add garlic and sauté for another minute until fragrant.
  4. Pour in the vegetable broth, canned tomatoes, chickpeas, paprika, and cumin. Stir well.
  5. Bring to a simmer and cook for about 15 minutes.
  6. Add spinach and simmer for an additional 5 minutes.
  7. Season with salt and pepper.
  8. Serve hot with a splash of lemon juice on top.

Notes

Speed things up by using pre-diced vegetables. For an extra creamy texture, blend a portion of the soup before adding the spinach. You can also make it vegan by omitting any dairy-based toppings.
