  • 1 lb chicken breasts Use boneless, skinless for easy preparation
  • 1 tablespoon olive oil For sautéing
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream Can substitute with coconut milk for a dairy-free version
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper Adjust according to personal preference
  • to garnish Fresh parsley Adds color and freshness to the dish

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and garlic, sauté until softened.
  3. Add the chicken breasts and cook until lightly browned on both sides.
  4. Pour in the chicken broth and add chopped carrots, celery, Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  6. Remove chicken, shred it, and return it to the pot.
  7. Stir in heavy cream and cook for an additional 5 minutes.
  8. Garnish with fresh parsley before serving.

Notes

Store in an airtight container in the fridge for 3-4 days. Can freeze for 2-3 months. Reheat on the stove with a splash of chicken broth if needed. Consider adding lemon juice for a brightness or red pepper flakes for some heat.
