  • 2 pieces ripe mangoes, peeled and diced
  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1/2 cup almond milk or any milk of choice Coconut milk adds a tropical twist.
  • 1/2 cup almond or peanut butter Substitute with sunbutter for nut-free option.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
Optional Toppings
  • nuts, seeds, or dried fruit Sprinkle on top before baking.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, combine rolled oats, diced mangoes, honey (or maple syrup), almond milk, almond or peanut butter, vanilla extract, cinnamon, and salt. Mix until well combined.
  3. Pour the mixture into the prepared baking dish and spread it out evenly. If desired, sprinkle optional toppings on top.
Baking
  1. Bake for 25-30 minutes or until the edges are lightly golden.
  2. Allow to cool before cutting into bars.

Notes

Store leftovers in an airtight container in the fridge for about 5-7 days or freeze for up to 3 months. Warm in a toaster for a treat.
