Ingredients
  

For the filling
  • 4 ripe mangoes, peeled and diced Use ripe mangoes for the sweetest flavor.
  • 1 cup brown sugar Split in half for filling and topping.
  • 1 tablespoon lemon juice Fresh lemon juice enhances flavor.
For the crumble topping
  • 1 cup all-purpose flour Can substitute with whole wheat flour or almond flour.
  • 1 cup rolled oats Gives a nice crunch.
  • 1/2 cup unsalted butter, melted Makes the crumble extra crispy.
  • 1 teaspoon cinnamon Feel free to add more for extra warmth.
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine diced mangoes, 1/2 cup of brown sugar, and lemon juice. Mix well and spread the mixture into a greased baking dish.
  3. In another bowl, mix together flour, oats, the remaining brown sugar, cinnamon, and salt.
  4. Pour the melted butter into the dry ingredients and mix until crumbly.
Baking
  1. Sprinkle the crumble topping evenly over the mango mixture in the baking dish.
  2. Bake for 30-35 minutes, or until the topping is golden brown and the mangoes are bubbly.
  3. Let it cool slightly before serving.
  4. Serve warm or at room temperature.

Notes

For serving, top with vanilla ice cream, whipped cream, or a sprinkle of fresh mint. Leftovers can be stored in the fridge for about 3-4 days or frozen for up to 3 months.
