Preparation
- Toast walnuts in a dry skillet over medium heat until fragrant. Let cool.
- In a food processor, pulse toasted walnuts until coarsely ground.
- Add cooked lentils to the food processor with walnuts. Pulse until combined but not a paste.
- Transfer the mixture to a bowl. Stir in breadcrumbs, chopped onion, minced garlic, beaten egg, olive oil, smoked paprika, cumin, salt, and pepper.
- Mix well until everything is evenly combined.
- Form the mixture into 4-6 patties.
Cooking
- Cook patties in a lightly oiled skillet over medium heat for 5-7 minutes per side, until golden brown and heated through.
- Serve on burger buns with your favorite toppings.
Notes
Store leftovers in the fridge for up to 3-4 days or freeze for up to 3 months. Reheat in a skillet for crispy goodness.
