  • 1 cup brown or green lentils, cooked
  • 1 cup walnuts, toasted
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 egg, beaten (or flax egg for vegan) To make vegan, mix 1 tablespoon of flaxseed meal with 2.5 tablespoons of water.
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Method
 

Preparation
  1. Toast walnuts in a dry skillet over medium heat until fragrant. Let cool.
  2. In a food processor, pulse toasted walnuts until coarsely ground.
  3. Add cooked lentils to the food processor with walnuts. Pulse until combined but not a paste.
  4. Transfer the mixture to a bowl. Stir in breadcrumbs, chopped onion, minced garlic, beaten egg, olive oil, smoked paprika, cumin, salt, and pepper.
  5. Mix well until everything is evenly combined.
  6. Form the mixture into 4-6 patties.
Cooking
  1. Cook patties in a lightly oiled skillet over medium heat for 5-7 minutes per side, until golden brown and heated through.
  2. Serve on burger buns with your favorite toppings.

Notes

Store leftovers in the fridge for up to 3-4 days or freeze for up to 3 months. Reheat in a skillet for crispy goodness.
