  • 1 tablespoon lemon zest Use fresh zest for the best flavor.
  • 2 tablespoons poppy seeds
  • 1/4 cup protein powder Optional.
  • 1 pinch salt

Method
 

Preparation
  1. In a mixing bowl, combine all the ingredients until well mixed.
  2. If the mixture is too wet, add more oats or protein powder.
  3. Roll the mixture into small balls, about 1 inch in diameter.
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm them up.

Notes

These energy bites can be stored in an airtight container in the refrigerator for up to a week. For longer storage, freeze them separated with parchment paper.
