Ingredients
  

Pizza Base
  • 1 piece Pizza dough Store-bought or homemade
Cheese Toppings
  • 1 cup Ricotta cheese Creamy texture for base
  • 1 cup Mozzarella cheese Shredded
Flavor Enhancers
  • 1 tablespoon Fresh thyme Chopped leaves
  • 1 medium Lemon Zest and juice needed
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat the oven to 475°F (245°C).
  2. Roll out the pizza dough on a floured surface to your desired thickness.
  3. Transfer the rolled dough to a pizza stone or baking sheet.
Topping and Baking
  1. Drizzle olive oil over the dough and spread a layer of ricotta cheese evenly.
  2. Sprinkle shredded mozzarella on top of the ricotta.
  3. Zest the lemon and add zest on top of the cheese. Squeeze lemon juice over for added flavor.
  4. Season with salt and pepper, and sprinkle fresh thyme leaves over the pizza.
  5. Bake in the oven for 10-12 minutes, until the crust is golden and cheese is bubbling.
  6. Remove from the oven, let cool slightly, slice, and enjoy your lemon pizza!

Notes

For added crunch, pre-bake the crust for a few minutes before adding toppings. This pizza can last in the fridge for about 3-4 days or be frozen for a month.
