For the Brownies
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 2 tablespoons lemon zest Use fresh lemons for the best flavor.
  • 1/4 cup fresh lemon juice Fresh is better than bottled.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix together melted butter and granulated sugar until combined.
  3. Add eggs, lemon zest, and lemon juice, then stir until smooth.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture until combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool before preparing the glaze.
Glazing
  1. To make the glaze, whisk together powdered sugar and lemon juice until smooth.
  2. Pour the glaze over the cooled brownies and allow it to set before cutting into squares.

Notes

These brownies can last up to a week in the fridge. For best flavor, use fresh lemons and zest them! Adjust sugar in the glaze to your preference. For variations, consider adding blueberries or using cream cheese frosting instead.
