  • 1/2 teaspoon salt
  • 1 cup fresh blueberries Frozen blueberries can also be used
  • 1 large egg Use room temperature
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the lemon zest and mix until combined.
  4. Beat in the egg and vanilla extract.
  5. In another bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients until well combined.
  7. Gently fold in the blueberries.
Baking
  1. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  2. Bake for 12-15 minutes or until the edges are lightly golden.
  3. Let cool on a wire rack before serving.

Notes

These cookies can be stored in an airtight container for about 5 days at room temperature, or they can be frozen for up to 3 months. Reheat in the microwave for a fresh-out-of-the-oven feel.
