  • 1 cup Fresh basil leaves Use fresh leaves; avoid dried basil.
  • 8 oz Vegan mozzarella cheese Choose high-quality for a creamy texture.
Dressing and Seasoning
  • 2 tbsp Olive oil Drizzle just before serving.
  • 2 tbsp Balsamic vinegar Drizzle just before serving.

Method
 

Preparation
  1. Slice the fresh tomatoes and vegan mozzarella cheese into even slices.
  2. On a serving platter, alternate layers of sliced tomatoes, vegan mozzarella, and fresh basil leaves.
  3. Drizzle olive oil and balsamic vinegar over the top.
  4. Season with salt and pepper to taste.
