Ingredients
  

Casserole Ingredients
  • 1 pound ground beef Browned and drained
  • 1 can diced tomatoes
  • 1 can corn
  • 1 packet taco seasoning
  • 8 ounces cream cheese Softened
  • 1 cup mozzarella cheese, shredded For topping
  • 1 cup cheddar cheese, shredded For topping
  • 1 can biscuit dough For base

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef, then drain excess fat.
  3. Stir in diced tomatoes, corn, and taco seasoning.
  4. In a separate bowl, soften the cream cheese and mix until smooth, then add it to the meat mixture.
Assembly
  1. Spread the biscuit dough in the bottom of a greased casserole dish.
  2. Pour the meat mixture over the biscuit base.
  3. Top with mozzarella and cheddar cheese.
Baking
  1. Bake for 25-30 minutes, or until the biscuits are golden and the cheese is bubbly.
  2. Let it cool slightly before serving.

Notes

Serve with a side of fresh salad or tortilla chips. Great with a dollop of sour cream or fresh cilantro on top. Leftovers can be stored in the fridge for about 3-4 days or frozen for up to 3 months.
