Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup hot honey
  • 4 cloves fresh garlic, minced Toasted for better flavor
  • 2 tbsp olive oil
  • to taste Salt and pepper
For the Bowl
  • 2 cups cooked rice or quinoa
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas) Chopped into bite-sized pieces
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp fresh lime juice

Method
 

Preparation
  1. Chop your mixed vegetables into bite-sized pieces.
  2. Pat the chicken dry and season both sides with salt and pepper.
Cooking
  1. Heat olive oil in a skillet over medium-high heat; sear chicken for 5-6 minutes on each side until golden brown and fully cooked.
  2. In a mixing bowl, combine hot honey, soy sauce, and lime juice; pour it over the seared chicken.
  3. Toss in your chopped vegetables during the last few minutes of cooking until they’re tender yet crisp.
Serving
  1. Serve the chicken and vegetables over cooked rice or quinoa, drizzling any remaining sauce on top.

Notes

This dish keeps well in the fridge for up to 3 days. You can make it ahead of time for quick lunches! Feel free to mix in whatever vegetables you have on hand. Drizzle some extra hot honey on top before serving.
