Ingredients
  

Vegetables
  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed
Sauce
  • 2 tablespoons honey
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
Seasoning and Garnish
  • to taste salt
  • to taste pepper
  • as needed fresh parsley for garnish optional

Method
 

Cooking
  1. In a large skillet, heat the olive oil and butter over medium heat.
  2. Add the sliced carrots and cook for about 5 minutes.
  3. Add the green beans and continue to cook until the veggies are tender, about 5-7 minutes more.
  4. Drizzle the honey and lemon juice over the vegetables, stirring to coat.
  5. Season with salt and pepper to taste.
  6. Cook for an additional 2-3 minutes until everything is well combined and heated through.
  7. Garnish with fresh parsley if desired and serve warm.

Notes

For a vegan alternative, swap butter for coconut oil or vegan butter. You can add garlic powder or crushed red pepper flakes for an extra kick. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for a month.
