  • 1 pound ground beef
  • 4 medium potatoes, peeled and sliced
  • 1 each onion, diced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup milk
  • 1 tablespoon olive oil
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Cook the ground beef and onion, seasoning with salt and pepper, until the meat is browned.
  3. In a large mixing bowl, combine the sliced potatoes, cooked beef mixture, cream of mushroom soup, and milk. Mix well.
  4. Spread the mixture into a greased 9x13 inch baking dish.
Baking
  1. Cover the dish with aluminum foil and bake for 1 hour.
  2. Remove the foil, sprinkle the shredded cheese on top, and return to the oven for an additional 15 minutes or until the cheese is bubbly and golden.
Serving
  1. Let it cool for a few minutes before serving.

Notes

Serve hot and pair with a fresh salad or roasted veggies. For a vegan option, swap ground beef for veggie crumbles and use plant-based cheese and soup.
